Sandvik's modified 12C27 stainless steel tuned for Opinel is known for its cut and easy maintenance. Stainless steel capable of undergoing the heat treatment that gives it its excellent hardness is called martensitic. It has a carbon percentage of at least 0.40% which allows for a very satisfactory cut without being sensitive to corrosion. Blade hardness 57-58 HRC
The hornbeam comes from French companies. It is a white wood with few veins, ideal for applying colors without distorting them. The handle is varnished to be effectively protected from dirt and humidity.

Cleaning and Maintenance:
The precautions that must be used with this carbon knife are to avoid using it with acidic foods that cause corrosion. In any case, clean well and dry after each use, occasionally lubricating the point of union between the blade and the handle.
MY FIRST OPINEL:
